Today's lunch is brought to you by last night's dinner: chicken kabobs with zucchini, red pepper, and onion, along with a brown rice/quinoa blend. Bob marinated the chicken in a bottled Teriyaki sauce that even has little Teriyaki seeds in it. The vegetables were tossed with olive oil and a premade Chicken seasoning. The whole dinner was ahmahzing!

One day last week I had the chance to enjoy a relaxing walk with a friend. The skies were crystal blue and the company was perfect :) We explored a place that is not new to Virginia Tech but was new to me: the Hahn Horticulture Garden! Very serene and beautiful. Thank you, Sam, for helping me learn something new. I really loved the hidden courtyards and benches, as well as all the little butterflies flitting along. It was all so very tranquil.
Because the beef & 'shrooms have tomato sauce in the base, I think it went very well with the pasta-like spaghetti squash.
Overall, I think I am ready to take a bit of a break from beef, but these meals were quite different. I loved the use of the spaghetti squash with the meaty sauce. I had been considering trying to do some kind of ground beef, diced tomatoes, squashy thing, and this ended up being pretty close and making good use of leftovers. Looking forward to tomorrow evening's Buffalo chicken burgers! Our weekend started off with Bob speaking at an Entrepreneur Week event called Startup Weekend. Bob's talk was short and to the point, and he did a great job! He focused on three components to a successful business plan: team, traction, and technology. There were about 13-15 other Startup Weekends happening across the United States on Friday. The purpose behind the Startup Weekend is that people come together, they pitch ideas, they narrow the ideas down to the top ten best ideas, they form teams, they work all weekend, and at the end of the weekend they share their progress, hopefully resulting in something very close to a viable business. At the end of the share time, awards are given for best results. It truly was inspiring to be in the room with people who are so creative and have such great ideas. I've missed Bob, since he's definitely be involved with this (he's a mentor) for much of the weekend, but I know it's for a good purpose. Go Starter Uppers! As far as our family time has gone this weekend, we've had a lot of fun. Since Bob took Taylor with him to work with the Startup teams on Saturday, I had some great quality time with Stephen. We ready a big stack of books and played outside and took Scuba for a walk. I also turned on College GameDay and got my football on! Bob came home in time for us to watch our Hokies lose to Pitt. That was a tough game to watch, but we cheered for our guys the whole time. We also had the company of my sis-in-law and her husband, so that made the loss a little easier for us to bear. Saturday evening we enjoy a glass of white wine from the Wintergreen Winery (buttery and refreshing!), along with grilled swai fish, roasted spaghetti squash and green beans. We finished out the day by watching the movie, The Double (it was pretty good!).
Turkey, Quinoa, and Peppers It's Wednesday! Crazy, because I spent all of yesterday thinking yesterday was Wednesday. Anyway. Today's lunch is pretty much the same as Monday's, but it's so darn good it doesn't matter. Also had 3 small mini-Reese's cups for a sweet treat. Breakfast was a small slice of pumpkin bread, iced coffee, and a banana. I wasn't sure I was going to be able to workout this morning. I've had some neck pain for the past few days, and yesterday at one point it was so bad I could barely move. I told myself that if it still hurt that bad this morning, I wouldn't be able to work out. But, it felt better today! Yay! I still took it really easy today. No increasing my weights today. This doesn't look pretty, but that's because it's so good, I almost forgot to take a picture! Seriously yummy lunch today.
This is a leftover Buffalo Chicken Burger, with some leftover quinoa (I added Parmesan cheese to it), and steamed broccoli & carrots. Absolutely delicious!
Hey look at me! I'm back, and I'm writing. Well, I'm taking pictures of my lunch, anyway. So, I miss writing, I really do. I've been craving it, actually.
At the same time, I am making some super yummy lunches. A lot of them include leftovers from some super yummy dinners. Pretty much all of them are involving lots of whole foods, which is really representative of the way I've been eating lately. I've found myself being so excited about what I'm eating for lunch, that I want to take a picture of it. This, I think, is too much oversharing for Facebook, so I've decided to try to post my daily lunches here. Especially if they are lunches worth sharing ;) Today's lunch is shredded turkey (leftover from last night's ahmazing dinner), quinoa, and some cut up red and green peppers. After I heated it all up, I added some Sriracha sauce. Delish! |
